Cooked an ox tongue today. I love the tender meat on my sandwich when it's cooked for three hours to a nice stock, will make a pumpkin soup of the stock tomorrow. When I was getting the top skin off the tongue I was mesmerized with the size of the taste papillae (they are huge on the back of the tongue) and the other side of the skin is beautiful.
